  • 1.5 cups cooked rice preferably a day old
  • 2 tablespoons vegetable oil
  • 1 pound chicken breast cut into bite-sized pieces
  • 1 cup pineapple chunks fresh or canned
  • 2 tablespoons soy sauce low sodium if preferred
  • 1 small onion diced
  • 1 cup frozen peas and carrots
  • 2 cloves garlic minced

Instructions
 

Preparation Steps

  • Heat 1 tablespoon of oil in a large pan over medium-high heat.
  • Add chicken and cook until browned and cooked through, about 5-7 minutes.
  • Remove chicken from the pan and set aside.
  • In the same pan, add the remaining oil and sauté onion, garlic, peas, and carrots until tender.
  • Stir in pineapple chunks and cook for an additional 2 minutes.
  • Add the rice to the pan, breaking up any clumps.
  • Return the chicken to the pan.
  • Add soy sauce and stir everything to combine, cooking for another 2-3 minutes.

Notes

For an extra kick, add a pinch of red pepper flakes before serving.
