Perfect Paleo Brownies with a Crackly Top
These paleo brownies are fudgy, rich, and easy to make with almond flour, coconut flour, cocoa, and dairy-free chocolate.

Ingredients
- 3 large eggs
- 1 cup coconut sugar
- 1/3 cup almond flour
- 2 tablespoons coconut flour
- 2 tablespoons dark cocoa powder
- 2 tablespoons prepared coffee cooled; water may be substituted
- 1 teaspoon vanilla extract
- 1 1/4 cups dairy-free chocolate chips divided
- 10 tablespoons refined coconut oil
Instructions
Heat the oven to 325°F. Line a 9-by-9-inch baking dish with parchment paper.
Beat the eggs and coconut sugar until light and fluffy, about 3 to 5 minutes. Stir in the almond flour, coconut flour, cocoa powder, cooled coffee, and vanilla.
Melt 1 cup of the chocolate chips with the coconut oil in short microwave bursts, stirring between bursts. Stir the smooth mixture into the batter.
Fold in the remaining chocolate chips.
Spread the batter evenly in the pan. Bake for 35 to 40 minutes, until a tester comes out with moist crumbs. Cool completely, then cut into 9 squares.
