Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
In a large bowl, cream together butter, peanut butter, sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract.
In another bowl, whisk together flour and baking soda. Gradually add to the creamed mixture.
Stir in the chopped peanut butter cups.
Drop dough by tablespoonfuls onto an ungreased cookie sheet.
Bake for 8-10 minutes or until edges are lightly browned. Cool on wire racks.
