6cupsfresh peaches, peeled and sliced (about 6 medium peaches)
0.25cupgranulated sugar

1cupold-fashioned rolled oats
0.5cupall-purpose flour
0.5cuppacked light brown sugar

0.5cupunsalted butter, cold and cut into small pieces

Preparation Steps
Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish.
In a large bowl, combine sliced peaches, granulated sugar, lemon juice, vanilla extract, and cinnamon. Toss to coat evenly, then transfer to the prepared baking dish.
In another bowl, mix together oats, flour, brown sugar, and salt. Add cold butter pieces and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Sprinkle the oat crumble evenly over the peaches.
Bake for 35–40 minutes, or until the topping is golden brown and the peach filling is bubbly.
Let cool for 10–15 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.
Notes
For best results, use ripe but firm peaches. If using frozen peaches, do not thaw—just increase baking time by 10 minutes.
