This rich one bowl moist chocolate cake comes together with pantry staples and no electric mixer. Coffee deepens the cocoa flavor while the simple method keeps cleanup easy.
Heat the oven to 320°F fan/convection or 355°F conventional. Grease and line an 8-inch round cake pan.
Whisk the milk and vinegar in a large bowl and let it stand for 5 minutes. Whisk in the oil, eggs, brown sugar, and caster sugar.
Sift in the flour, cocoa powder, baking powder, and salt. Whisk until combined, then whisk in the boiling coffee or water.
Pour the batter into the pan and bake in the lower half of the oven for 55 to 60 minutes, until a skewer comes out clean. Cool in the pan for 20 minutes, then transfer to a rack to cool completely.
