moist banana bread recipe

This moist banana bread is soft, fluffy, and packed with the sweet flavor of ripe bananas. Topped with a rich cream cheese frosting, it's the perfect way to use up overripe bananas. Simple to make and always a hit!

  • 0.5 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 3 large eggs
  • 1.5 cups bananas, mashed about 3 large ripe bananas
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.25 tsp salt pinch

Cream Cheese Frosting

  • 0.5 cup unsalted butter, softened
  • 8 oz cream cheese, softened 1 package
  • 2 cups powdered sugar also known as icing sugar
  • 1 tsp vanilla extract

Preparation Steps

  • Preheat oven to 350°F. Grease a 9x13 inch baking pan and set aside.
  • In a large bowl, beat butter and sugar until combined. Add eggs, bananas, and vanilla; beat until combined.
  • In another bowl, stir together flour, baking soda, and salt. Add to wet mixture and stir until just combined.
  • Pour batter into prepared baking pan. Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.

Cream Cheese Frosting

  • Beat together butter and cream cheese until smooth. Gradually add powdered sugar and vanilla. Beat until smooth and creamy. Spread over cooled banana bread.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For best texture, let sit at room temperature for 10 minutes before serving.
