  • 1 cup mayonnaise
  • 1 cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 cup cilantro chopped

Preparation Steps

  • Preheat a skillet over medium heat and add the corn kernels. Cook until slightly charred, about 5-7 minutes.
  • In a large bowl, mix the charred corn, mayonnaise, cotija cheese, lime juice, and chili powder until well combined.
  • Transfer the dip to a serving dish and garnish with chopped cilantro.

Notes

For extra flavor, add a dash of hot sauce to the dip. Serve with tortilla chips or freshly sliced vegetables.
