Mexican Green Rice
This fluffy Mexican green rice blends fresh cilantro, lime, and jalapeño into an easy side dish for tacos, beans, and weeknight dinners.

Ingredients
- 1 1/2 cups long-grain white rice rinsed
- 2 cups vegetable broth
- 1 cup fresh cilantro loosely packed
- 1 jalapeño seeded
- 1/2 cup diced onion
- 2 cloves garlic
- 1 tablespoon lime juice fresh
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Instructions
Blend the cilantro, broth, jalapeño, garlic, lime juice, and salt until smooth.
Warm the olive oil in a saucepan over medium heat. Add the rinsed rice and onion, stirring until the rice is lightly toasted, about 3 minutes.
Pour in the green broth and bring it to a boil.
Cover, reduce the heat to low, and simmer for 18 minutes, or until the liquid is absorbed and the rice is tender.
Remove from the heat and let stand covered for 5 minutes. Fluff with a fork and serve with extra lime if desired.
