Mexican Corn Salad

A vibrant and flavorful Mexican corn salad, perfect as a side dish or a light meal.

  • 5 cups corn fresh or frozen, thawed
  • 1 cup red onion finely diced
  • 1 cup red bell pepper diced
  • 1 cup jalapeno seeded and minced, optional
  • 0.5 cup cilantro chopped
  • 0.25 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • If using fresh corn, cut kernels off the cobs. If using frozen corn, thaw and drain.
  • In a large bowl, combine the corn, diced red onion, diced red bell pepper, minced jalapeno (if using), and chopped cilantro.
  • In a small bowl or jar, whisk together the lime juice, olive oil, chili powder, cumin, salt, and black pepper to make the dressing.
  • Pour the dressing over the corn mixture and toss gently to combine.
  • For best flavor, let the salad sit for at least 15 minutes before serving to allow the flavors to meld. Taste and adjust seasoning if needed.

Notes

This Mexican corn salad is delicious served chilled or at room temperature. It pairs well with grilled meats, tacos, or as a standalone appetizer.
