  • 3.5 cups frozen corn kernels thawed
  • 1.5 cups shredded cheddar cheese divided
  • 1 cup sour cream
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix together the corn, 1 cup of cheddar cheese, sour cream, chili powder, and salt.
  • Pour the mixture into a greased baking dish.
  • Bake in the preheated oven for 40 minutes.
  • Sprinkle the top with the remaining cheddar cheese and bake for an additional 5 minutes until the cheese is melted.

Notes

This casserole can be served as a side dish with grilled chicken or as a standalone meal. Add jalapeños if you like it spicy!
