Mediterranean Rice Bowl

  • 1.5 cup cooked rice
  • 1 can chickpeas rinsed and drained
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion thinly sliced
  • 0.5 cup Kalamata olives pitted and halved
  • 0.25 cup fresh parsley chopped
  • 4 ounce feta cheese crumbled

Lemon-Herb Dressing

  • 0.25 cup olive oil
  • 3 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper for the dressing. Set aside.
  • In a large bowl, combine the cooked rice, chickpeas, cucumber, cherry tomatoes, red onion, and Kalamata olives.
  • Pour the lemon-herb dressing over the rice mixture and toss gently to combine.
  • Divide the mixture among serving bowls. Top with crumbled feta cheese and chopped fresh parsley.
  • Serve immediately or chill for later.

Notes

This recipe is easily customizable. Feel free to add other vegetables like bell peppers or spinach.
