Mediterranean Chicken Dish

A flavorful and healthy Mediterranean-inspired chicken dish with fresh herbs, lemon, and olives.

  • 1.5 pounds chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 0.5 cup kalamata olives pitted and halved
  • 0.25 cup fresh parsley chopped
  • 0.25 cup fresh oregano chopped
  • 0.5 lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken pieces and cook until browned on all sides.
  • Add chopped onion and cook until softened, about 5 minutes.
  • Stir in minced garlic and cook for 1 minute until fragrant.
  • Pour in diced tomatoes (with juice) and add halved kalamata olives.
  • Bring to a simmer, then reduce heat and cook for 10-15 minutes, or until chicken is cooked through and sauce has thickened slightly.
  • Stir in chopped parsley, chopped oregano, lemon juice, salt, and black pepper.
  • Serve hot, garnished with extra parsley if desired.

Notes

This dish is delicious served with rice, quinoa, or crusty bread.
