Mediterranean Chicken Casserole

A flavorful and healthy Mediterranean chicken casserole packed with vegetables and herbs.

  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 1 can (15 ounce) chickpeas rinsed and drained
  • 0.5 cup Kalamata olives pitted and halved
  • 0.25 cup fresh parsley chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup chicken broth
  • 0.5 cup crumbled feta cheese

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large oven-safe skillet over medium-high heat.

  • Add chicken pieces and cook until browned on all sides.

  • Add chopped onion and cook until softened, about 5 minutes.

  • Stir in minced garlic and cook for 1 minute more until fragrant.

  • Pour in the diced tomatoes (with juice), chickpeas, Kalamata olives, fresh parsley, oregano, salt, and pepper. Stir to combine.

  • Pour in the chicken broth and bring to a simmer.

  • Sprinkle the crumbled feta cheese over the top.

  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
