Meatloaf Muffins

A delightful twist on the classic meatloaf, perfect for individual servings.

  • 1.5 lbs ground beef preferably lean
  • 1 cup breadcrumbs can use gluten-free if needed
  • 0.5 cup milk
  • 1 large egg beaten
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 0.5 cup ketchup for topping

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix ground beef, breadcrumbs, milk, beaten egg, salt, and pepper until combined.
  • Divide the mixture evenly into a lightly greased muffin tin.
  • Spread ketchup on top of each meatloaf muffin.
  • Bake in the preheated oven for 25-30 minutes until fully cooked.

Notes

Best served with mashed potatoes or a side salad.
