Massaman Curry Recipe

A rich and flavorful Thai Massaman curry with tender chicken, potatoes, and peanuts. Perfect for a weeknight dinner or special occasion.

  • 1.5 lbs Chicken thighs
  • 1 large Onion chopped
  • 2 tbsp Massaman curry paste
  • 1 cup Coconut milk
  • 1 cup Chicken broth
  • 2 medium Potatoes peeled and cubed
  • 0.5 cup Roasted peanuts

Preparation Steps

  • In a large pot or Dutch oven, brown the chicken thighs over medium-high heat.
  • Add the onion and cook until softened. Stir in the curry paste and cook for 1 minute.
  • Pour in the coconut milk and chicken broth. Add the potatoes and bring to a simmer.
  • Reduce heat and simmer for 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Stir in the roasted peanuts before serving.

Notes

Serve hot with rice and your favorite toppings.
