  • 1 cup mandarin orange segments

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together mandarin orange juice, oil, and eggs.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Fold in the mandarin orange segments.
  • Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before frosting or serving.

Notes

For a sweeter cake, add 1/4 cup more sugar. You can also use a different type of citrus fruit, such as oranges or lemons.
