Loaded Breakfast Burrito: A Hearty Make-Ahead Start

These loaded breakfast burritos layer tender eggs, savory sausage, crisp bacon, tater tots, vegetables, and melty cheese in a warm flour tortilla.

  • 2 cups tater tots about half a bag, prepared according to package directions
  • 1 lb ground pork sausage hot sausage if desired
  • 1/2 lb bacon cooked and chopped
  • 8 eggs scrambled
  • 2 tbsp milk
  • 1 tbsp butter
  • 1/2 onion diced
  • 1 jalapeno diced
  • 3 Roma tomatoes seeded and diced
  • 1 1/2 cups cheddar cheese shredded
  • 1 1/2 cups pepper jack cheese shredded
  • 1/2 cup cilantro chopped
  • 6-8 10-inch tortillas flour tortillas

  • Prepare the tater tots according to the package directions and set them aside.
  • Heat a skillet over medium heat and cook the bacon until desired crispness. Drain and chop it, then pour off excess bacon fat. Add the sausage, jalapeno, and onion, breaking up the meat, and cook until done, about 6 to 7 minutes.
  • In a bowl whisk the eggs and milk, seasoning with salt and pepper. Melt the butter in a nonstick skillet, add the egg mixture, cook over medium-low just until cooked, and remove from heat while the eggs are still tender.
  • In the middle of a flour tortilla add cheese, scrambled eggs, bacon, sausage, jalapenos, onions, tater tots, fresh tomatoes, and cilantro. Tuck in the sides and roll up the tortilla.
  • Place the burritos seam-side down, cover with a damp paper towel, and microwave for a few seconds to melt the cheese.
  • For reheating, wrap a burrito in a damp paper towel and microwave for 1 minute, or heat it in a skillet or 350°F oven until heated through.
