  • 6 cups chicken broth low sodium preferred
  • 4 pieces baking potatoes peeled and diced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 cup sour cream
  • 1 tablespoon butter
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Preparation Steps

  • In a large pot, melt the butter over medium heat.
  • Add the diced potatoes and chicken broth. Bring to a boil.
  • Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  • Stir in the heavy cream, sour cream, cheddar cheese, salt, and pepper.
  • Cook for another 5 minutes, stirring frequently, until the cheese is melted.
  • Serve hot, topped with extra cheese if desired.
