Instructions
Preparation Steps
In a large pot, melt the butter over medium heat.
Add the diced potatoes and chicken broth. Bring to a boil.
Reduce heat and simmer for 20 minutes, or until potatoes are tender.
Stir in the heavy cream, sour cream, cheddar cheese, salt, and pepper.
Cook for another 5 minutes, stirring frequently, until the cheese is melted.
Serve hot, topped with extra cheese if desired.
