This loaded baked potato salad is a delicious twist on the classic side dish, combining creamy potatoes with toppings reminiscent of a loaded baked potato.

  • 3 pounds Russet potatoes peeled and cubed
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 0.5 cup cooked bacon chopped
  • 0.5 cup green onions sliced
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Preparation Steps

  • Boil potatoes in a large pot of salted water until tender, about 15 minutes. Drain and cool.
  • In a large bowl, combine sour cream, mayonnaise, salt, and pepper.
  • Add cooled potatoes, cheddar cheese, bacon, and green onions to the bowl. Stir gently to combine.
  • Refrigerate the salad for at least 1 hour before serving.

Notes

Feel free to add more toppings such as chopped chives, diced jalapeños, or a dollop of ranch dressing for extra flavor.
