  • 1 lb Linguine Pasta
  • 2 lbs Fresh Clams Manila or littleneck
  • 4 cloves Garlic Minced
  • 1 /4 cup Olive Oil Extra virgin
  • 1 /2 cup Dry White Wine Such as Pinot Grigio
  • 1 /4 cup Fresh Parsley Chopped
  • Red Pepper Flakes To taste
  • Salt To taste
  • Black Pepper To taste

Preparation Steps

  • Scrub clams and soak in cold, salted water for 20 minutes to remove any sand.
  • Cook linguine according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  • While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook for 1 minute, until fragrant.
  • Add clams and white wine to the skillet. Cover and cook for 5-7 minutes, or until clams open. Discard any clams that do not open.
  • Add cooked linguine to the skillet with the clams. Toss to combine, adding reserved pasta water as needed to create a sauce.
  • Stir in parsley and season with salt and pepper to taste. Serve immediately.

Notes

Serve with a side of crusty bread for dipping in the sauce.
