  • 1 lb Italian Sausage Sweet or spicy, your choice
  • 1 cup Brown Lentils Rinsed
  • 4 cups Chicken Broth Low sodium
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 cup Diced Onion
  • 2 cloves Garlic Minced
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Salt To taste
  • 0.5 tsp Black Pepper To taste

Preparation Steps

  • In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Remove sausage and set aside, leaving drippings in the pot.
  • Add carrots, celery, and onion to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
  • Stir in lentils, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
  • Return sausage to the pot and simmer for another 15 minutes to heat through.
  • Serve hot and enjoy!

Notes

For a vegetarian option, omit the sausage and use vegetable broth. Add a splash of lemon juice at the end for extra brightness.
