A hearty and flavorful lentil sausage soup, perfect for a comforting meal. Packed with protein and vegetables, it's easy to make and incredibly satisfying.
In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Remove sausage and set aside, leaving drippings in the pot.
Add carrots, celery, and onion to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
Stir in lentils, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
Return sausage to the pot and simmer for another 15 minutes to heat through.
