  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter softened
  • 1 package instant lemon pudding mix
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon lemon zest freshly grated

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well with each addition. Stir in lemon zest.
  • In another bowl, whisk together the flour, pudding mix, baking powder, and salt.
  • Gradually add dry ingredients to the wet ingredients, mixing until combined.
  • Spread the batter evenly into the prepared pan.
  • Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool completely before cutting into bars.

Notes

Best served with a dollop of whipped cream or a dusting of powdered sugar.
