Lemon Pound Cake Recipe

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 0.5 cup lemon juice

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a medium bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  • In a large bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon zest and juice.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
