Lemon Frosted Cookies

These zesty lemon frosted cookies are the perfect treat for any occasion. The bright lemon flavor is balanced by a sweet, creamy frosting.

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  • Roll dough into 1-inch balls and place on ungreased baking sheets.
  • Bake for 10-12 minutes, or until edges are lightly golden.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • While cookies cool, prepare frosting: Whisk together powdered sugar, lemon juice, and lemon zest until smooth.
  • Once cookies are completely cool, frost them and enjoy!

Notes

Store cookies in an airtight container at room temperature for up to 3 days.
