Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
Cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
Roll dough into 1-inch balls and place on ungreased baking sheets.
Bake for 10-12 minutes, or until edges are lightly golden.
Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
While cookies cool, prepare frosting: Whisk together powdered sugar, lemon juice, and lemon zest until smooth.
Once cookies are completely cool, frost them and enjoy!
