Lemon Blueberry Cobbler

A delightful dessert combining zesty lemon and juicy blueberries in a comforting cobbler.

  • 2 cups blueberries fresh or frozen
  • 0.5 cup granulated sugar divided
  • 1 tablespoon lemon juice freshly squeezed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup milk
  • 0.25 cup melted butter

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the blueberries, 1/4 cup of sugar, and lemon juice.
  • In another bowl, mix together the flour, remaining sugar, baking powder, and salt.
  • Stir in milk and melted butter until the batter is smooth.
  • Spread the blueberry mixture in a 9x9 inch baking dish. Pour the batter over the blueberries.
  • Bake for 45 minutes or until the cobbler is golden brown.

Notes

Best served warm with a scoop of vanilla ice cream.
