Leftover Turkey Soup

A comforting and hearty soup made with leftover turkey, perfect for a quick and delicious meal.

  • 2 cups cooked turkey shredded or diced
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 ribs celery stalks chopped
  • 2 medium carrots peeled and sliced
  • 4 cloves garlic minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste
  • 1 cup egg noodles uncooked
  • 0.5 cup fresh parsley chopped

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add chopped onion, celery, and carrots. Cook until softened, about 5-7 minutes.
  • Stir in minced garlic and cook for 1 minute more until fragrant.
  • Pour in the chicken broth and add thyme and rosemary. Season with salt and pepper.
  • Bring the soup to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld.
  • Add the cooked turkey and uncooked egg noodles to the pot.
  • Continue to simmer for another 10-15 minutes, or until the noodles are tender and the turkey is heated through.
  • Stir in fresh parsley just before serving.

Notes

This soup is even better the next day. You can also add other vegetables like peas or corn if desired.
