  • 1 lb Ground Beef Lean
  • 1 medium Yellow Onion Diced
  • 2 cloves Garlic Minced
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 0.5 tsp Red Pepper Flakes Optional
  • 28 oz Crushed Tomatoes
  • 4 cups Beef Broth Low Sodium
  • 8 oz Lasagna Noodles Broken into pieces
  • 15 oz Ricotta Cheese
  • 0.25 cup Grated Parmesan Cheese
  • 2 tbsp Fresh Parsley Chopped

Preparation Steps

  • In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute more.
  • Pour in the crushed tomatoes and beef broth. Bring to a simmer.
  • Add the broken lasagna noodles to the soup. Cook until the noodles are tender, about 10-12 minutes.
  • In a small bowl, combine the ricotta cheese, parmesan cheese, and fresh parsley.
  • Ladle the soup into bowls and top with a spoonful of the ricotta mixture. Serve immediately.

Notes

For a richer flavor, add a splash of red wine while cooking the ground beef. You can also add other vegetables, such as chopped carrots or zucchini.
