Preparation Steps
In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
Stir in the dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute more.
Pour in the crushed tomatoes and beef broth. Bring to a simmer.
Add the broken lasagna noodles to the soup. Cook until the noodles are tender, about 10-12 minutes.
In a small bowl, combine the ricotta cheese, parmesan cheese, and fresh parsley.
Ladle the soup into bowls and top with a spoonful of the ricotta mixture. Serve immediately.
Notes
For a richer flavor, add a splash of red wine while cooking the ground beef. You can also add other vegetables, such as chopped carrots or zucchini.
