Key Lime Pie Bars

Delicious and easy-to-make key lime pie bars with a buttery graham cracker crust and a zesty lime filling.

Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

Filling

  • 4 large egg yolks
  • 1 can sweetened condensed milk (14 oz)
  • 0.5 cup fresh key lime juice
  • 1 teaspoon lime zest

Topping (Optional)

  • 1 cup whipped cream
  • 0.5 cup fresh lime slices

Preparation Steps

  • Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar for the crust. Mix until well combined.

  • Press the crumb mixture evenly into the bottom of the prepared baking pan to form the crust.
  • Bake the crust for 10 minutes. Remove from oven and let cool slightly while you prepare the filling.
  • In a separate bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.

  • Pour the filling over the baked crust. Spread evenly.
  • Bake for another 15-18 minutes, or until the filling is set but still has a slight jiggle in the center.
  • Let the bars cool completely at room temperature, then refrigerate for at least 2 hours, or until firm.
  • Use the parchment paper overhang to lift the bars out of the pan. Cut into bars.
  • Serve chilled, topped with whipped cream and lime slices if desired.

Notes

These bars are best enjoyed cold. They can be stored in an airtight container in the refrigerator for up to 3 days.
