Cook pasta according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Season with salt, pepper, and Italian seasoning.
Add garlic and sun-dried tomatoes to the skillet and cook for 1 minute, until fragrant.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
Add cooked pasta to the skillet and toss to coat. Serve immediately.
Notes
Garnish with fresh parsley or basil for added flavor and color. For a spicier dish, add a pinch of red pepper flakes.
