Instant Pot Pork Chops

Ingredients
- 4 boneless pork chops
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 small yellow onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 tablespoons cornstarch
- 3 tablespoons cold water
Instructions
Pat the pork chops dry and season both sides with salt, pepper, and paprika.
Set the Instant Pot to sauté. Add the olive oil, then brown the pork chops in batches for about 2 minutes per side. Transfer them to a plate.
Add the onion and garlic to the pot and cook briefly. Pour in the broth and scrape up the browned bits. Stir in the Worcestershire sauce and thyme.
Return the pork chops to the pot. Seal the lid and cook at high pressure for 8 minutes, then allow a 10-minute natural release before carefully venting remaining pressure.
Remove the pork chops. Whisk the cornstarch and cold water together, turn on sauté, and stir the slurry into the broth until the gravy thickens. Serve the chops with gravy.
Use chops of similar thickness so they cook evenly.
Let the pork rest briefly before serving so the juices settle.
