Instant Pot Corned Beef and Cabbage

Tender pressure-cooked corned beef with potatoes, carrots, and cabbage makes a hearty one-pot dinner.

  • 3 pounds corned beef brisket with seasoning packet, rinsed
  • 1 yellow onion quartered
  • 4 cups low-sodium beef broth
  • 1 cup water
  • 1 pound baby potatoes halved
  • 4 carrots cut into chunks
  • 1 small head green cabbage cut into wedges
  • 2 tablespoons chopped fresh parsley for serving

  • Place the onion, broth, and water in the Instant Pot and set the corned beef on top, fat side up.
  • Lock the lid, set the valve to sealing, and cook on high pressure for 80 minutes.
  • Let pressure release naturally for 15 minutes, then vent remaining pressure and transfer the beef to a board.
  • Add potatoes and carrots to the broth, then cook on high pressure for 4 minutes and quick-release.
  • Add cabbage wedges, cook on high pressure for 2 minutes, and quick-release immediately.
  • Slice the rested beef against the grain and serve with vegetables, broth, and parsley.

Notes

Rinse the brisket briefly to remove excess surface brine.
