Instant Pot Corned Beef and Cabbage
Tender pressure-cooked corned beef with potatoes, carrots, and cabbage makes a hearty one-pot dinner.

Place the onion, broth, and water in the Instant Pot and set the corned beef on top, fat side up.
Lock the lid, set the valve to sealing, and cook on high pressure for 80 minutes.
Let pressure release naturally for 15 minutes, then vent remaining pressure and transfer the beef to a board.
Add potatoes and carrots to the broth, then cook on high pressure for 4 minutes and quick-release.
Add cabbage wedges, cook on high pressure for 2 minutes, and quick-release immediately.
Slice the rested beef against the grain and serve with vegetables, broth, and parsley.
Notes
Rinse the brisket briefly to remove excess surface brine.
