Crust

  • 1.5 cups Chocolate cookie crumbs
  • 0.33 cup Melted unsalted butter

Filling

  • 32 oz Cream cheese softened
  • 1.5 cups Granulated sugar
  • 0.5 cup Sour cream
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 0.5 cup Melted dark chocolate
  • 1 cup Fresh raspberries

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese and sugar until smooth. Stir in sour cream and vanilla extract.
  • Add eggs one at a time, mixing well after each addition. Stir in melted chocolate.
  • Gently fold in raspberries.
  • Pour batter over crust. Bake for 60-70 minutes, or until set.
  • Let cool completely before refrigerating for at least 4 hours.

Notes

For best results, use high-quality chocolate and fresh raspberries. You can also add a chocolate ganache topping for extra decadence.
