Preparation Steps
Preheat oven to 350°F (175°C).
In a bowl, combine cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
In a large bowl, beat cream cheese and sugar until smooth. Stir in sour cream and vanilla extract.
Add eggs one at a time, mixing well after each addition. Stir in melted chocolate.
Gently fold in raspberries.
Pour batter over crust. Bake for 60-70 minutes, or until set.
Let cool completely before refrigerating for at least 4 hours.
Notes
For best results, use high-quality chocolate and fresh raspberries. You can also add a chocolate ganache topping for extra decadence.
