Hummus Veggie Bento Box in 20 Minutes

Ingredients
- 1 15-ounce can chickpeas drained and rinsed
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic minced
- 2 tablespoons olive oil
- 2 tablespoons cold water plus more if needed
- 1/4 teaspoon salt
- 1 red bell pepper cut into strips
- 1 cup snap peas trimmed
- 2 carrots cut into sticks
- 2 whole-wheat pitas cut into wedges
Instructions
Blend the chickpeas, tahini, lemon juice, garlic, olive oil, cold water, and salt until smooth, adding a little more water only if needed.
Divide the hummus evenly among four small leakproof containers.
Divide the red bell pepper strips, snap peas, carrot sticks, and whole-wheat pita wedges among four compartmented lunch boxes.
Seal the hummus containers, add one to each bento box, and refrigerate until ready to pack or serve.
