  • 1 cup Chopped celery
  • 1 medium Yellow onion Diced
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil
  • 0.5 tsp Dried thyme
  • 0.25 tsp Salt Or to taste
  • 0.25 tsp Black pepper Or to taste

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides.
  • Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  • Stir in garlic, thyme, salt, and pepper. Cook for 1 minute more.
  • Pour in chicken broth and bring to a boil. Add orzo and reduce heat to a simmer.
  • Cover and simmer for 15-20 minutes, or until the orzo is cooked through and the chicken is cooked.
  • Remove from heat and let stand for 5 minutes before serving.
  • Garnish with fresh parsley, if desired.
