Preparation Steps
Melt butter in a large skillet over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly, to create a roux.
Gradually whisk in chicken broth until smooth. Add heavy cream and bring to a simmer, stirring occasionally.
Add chicken, bell peppers, and mushrooms to the skillet. Cook until chicken is cooked through and vegetables are tender, about 8-10 minutes.
Stir in pimentos, sherry (if using), salt, and pepper. Simmer for another 5 minutes to allow flavors to meld.
Serve hot over toast, rice, or puff pastry.
Notes
For a richer flavor, use homemade chicken broth. You can also add a pinch of nutmeg for extra warmth.
