  • 1 tablespoon Olive Oil
  • 1 pound Boneless, Skinless Chicken Breasts cut into 1-inch pieces
  • 1 medium Yellow Onion diced
  • 2 stalks Celery diced
  • 2 cloves Garlic minced
  • 8 cups Chicken Broth low sodium
  • 1 cup Carrots diced
  • 0.5 cup Long-grain Rice uncooked
  • 0.25 cup Fresh Lemon Juice
  • 2 tablespoons Fresh Parsley chopped
  • to taste Salt
  • to taste Black Pepper

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  • Add onion, celery, and garlic to the pot and cook until softened, about 5 minutes.
  • Pour in chicken broth and bring to a boil. Add carrots and rice. Reduce heat and simmer for 15 minutes.
  • Return chicken to the pot. Simmer for another 10 minutes, or until chicken is cooked through and rice is tender.
  • Stir in lemon juice and parsley. Season with salt and pepper to taste. Serve hot.

Notes

For a thicker soup, add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) during the last 5 minutes of cooking.
