Instructions
Preparation Steps
Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
Add onion, celery, and garlic to the pot and cook until softened, about 5 minutes.
Pour in chicken broth and bring to a boil. Add carrots and rice. Reduce heat and simmer for 15 minutes.
Return chicken to the pot. Simmer for another 10 minutes, or until chicken is cooked through and rice is tender.
Stir in lemon juice and parsley. Season with salt and pepper to taste. Serve hot.
Notes
For a thicker soup, add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) during the last 5 minutes of cooking.
