Ingredients
  

Crust

  • 1.5 cups Reese's Peanut Butter Cups, crushed About 20 cups
  • 0.25 cup Melted Butter Unsalted

Filling

  • 32 oz Cream Cheese Softened
  • 1.25 cups Sugar
  • 1 tsp Vanilla Extract
  • 4 Large Eggs

Topping

  • 1 cup Heavy Cream
  • 8 oz Semi-Sweet Chocolate Chips

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  • Combine crushed Reese's cups and melted butter. Press into the bottom of the prepared pan.
  • In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla. Add eggs one at a time, beating until just combined.
  • Pour filling over crust. Bake for 60-70 minutes, or until set around the edges but still slightly wobbly in the center. Let cool completely in the oven with the door ajar.
  • For the ganache, heat heavy cream in a saucepan over medium heat. Remove from heat and add chocolate chips. Let stand for 1 minute, then stir until smooth. Pour over cheesecake.
  • Refrigerate for at least 4 hours before serving.
