  • 1.5 cups All-purpose flour plus more for dusting the pan
  • 0.75 cup Granulated sugar
  • 0.5 tsp Baking soda
  • 0.25 tsp Salt
  • 0.5 cup Vegetable oil
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 1 cup Buttermilk
  • 1 cup Diced fresh peaches
  • 4 oz Cream cheese softened

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, sugar, baking soda, and salt.
  • In a separate bowl, combine oil, eggs, vanilla extract, and buttermilk. Add the wet ingredients to the dry ingredients and mix until just combined.
  • Gently fold in the diced peaches and cream cheese.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter loaf, add a simple glaze made from powdered sugar and milk.
