Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In a separate bowl, combine oil, eggs, vanilla extract, and buttermilk. Add the wet ingredients to the dry ingredients and mix until just combined.
Gently fold in the diced peaches and cream cheese.
Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a sweeter loaf, add a simple glaze made from powdered sugar and milk.
