  • 6 cups Chicken Broth Low Sodium preferred
  • 1.5 lbs Russet Potatoes Peeled and cubed
  • 1 head Broccoli Cut into florets
  • 1 cup Shredded Cheddar Cheese Sharp Cheddar is recommended
  • 0.5 cup Heavy Cream Optional

Seasoning

  • 1 teaspoon Salt To taste
  • 0.5 teaspoon Black Pepper To taste
  • 0.5 teaspoon Garlic Powder

Instructions
 

Preparation Steps

  • Place the potatoes and chicken broth into a slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes are very tender.
  • Stir in the broccoli during the last 30 minutes of cooking.
  • Mash some of the potatoes with a fork or potato masher to thicken the soup.
  • Stir in the cheddar cheese until melted. Add salt, pepper, and garlic powder to taste.
  • If desired, stir in the heavy cream for extra creaminess.
  • Serve hot and enjoy!

Notes

For a smoother soup, use an immersion blender to partially blend the soup before adding the cheese.
