Instructions
Preparation Steps
Place the potatoes and chicken broth into a slow cooker.
Cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes are very tender.
Stir in the broccoli during the last 30 minutes of cooking.
Mash some of the potatoes with a fork or potato masher to thicken the soup.
Stir in the cheddar cheese until melted. Add salt, pepper, and garlic powder to taste.
If desired, stir in the heavy cream for extra creaminess.
Serve hot and enjoy!
Notes
For a smoother soup, use an immersion blender to partially blend the soup before adding the cheese.
