  • 2 lb Russet Potatoes Peeled and cubed
  • 1 cup Heavy Cream Warmed
  • 4 tbsp Butter Unsalted
  • 1 tsp Garlic Powder
  • 0.5 cup Grated Parmesan Cheese
  • 0.5 tsp Salt To taste
  • 0.25 tsp Black Pepper To taste
  • 2 tbsp Fresh Parsley Chopped, for garnish

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  • Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  • Drain the potatoes well and return them to the pot.
  • Add the warm heavy cream, butter, garlic powder, salt, and pepper to the pot. Mash until smooth and creamy.
  • Stir in the grated Parmesan cheese.
  • Spoon the mashed potatoes into the prepared muffin tin, filling each cup to the top.
  • Bake in the preheated oven for 20-25 minutes, or until lightly golden brown on top. Garnish with chopped fresh parsley before serving.

Notes

These are best served warm. They can be made ahead and reheated.
