  • 1 cup Granulated Sugar
  • 0.75 cup Unsweetened Cocoa Powder Dutch-processed cocoa powder recommended.
  • 0.5 tsp Baking Soda
  • 0.25 tsp Salt
  • 0.5 cup Vegetable Oil
  • 2 Large Eggs
  • 2 tsp Vanilla Extract
  • 1 cup Boiling Water

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  • In a large bowl, whisk together the gluten-free flour, sugar, cocoa powder, baking soda, and salt.
  • Add the oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  • Gradually add the boiling water to the batter, mixing until smooth.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Let cool completely before cutting into squares.

Notes

For a richer flavor, add chocolate chips to the batter. Store leftovers in an airtight container at room temperature.
