Preparation Steps
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Add milk and vanilla extract. Mix until a dough forms.
Roll out the dough on a lightly floured surface to about 1/8 inch thickness.
Use animal-shaped cookie cutters to cut out the crackers. Place them on the prepared baking sheets.
Bake for 10-12 minutes, or until the edges are lightly golden brown.
Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
