Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
  • Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Add milk and vanilla extract. Mix until a dough forms.
  • Roll out the dough on a lightly floured surface to about 1/8 inch thickness.
  • Use animal-shaped cookie cutters to cut out the crackers. Place them on the prepared baking sheets.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
