Preparation Steps
In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
Add mashed potatoes, olive oil, salt, and gluten-free flour to the bowl. Mix until a shaggy dough forms.
Transfer the dough to a greased loaf pan. Cover and let it rise in a warm place for 1 hour, or until doubled in size.
Preheat oven to 375°F (190°C). Bake for 50 minutes, or until golden brown and the internal temperature reaches 200°F (93°C).
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a richer flavor, use homemade mashed potatoes. Store leftovers in an airtight container at room temperature.
