Preparation Steps
In a large bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, whisk together the milk, sugar, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the diced apples.
Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).
Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
Fry for 2-3 minutes per side, or until golden brown and cooked through. Remove with a slotted spoon and place on a wire rack to drain.
