Preparation Steps

  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, whisk together the milk, sugar, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in the diced apples.
  • Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C).
  • Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
  • Fry for 2-3 minutes per side, or until golden brown and cooked through. Remove with a slotted spoon and place on a wire rack to drain.
