  • 1.25 cups Gluten-Free All-Purpose Flour Blend Make sure it contains xanthan gum.
  • 0.33 cup Unsweetened Cocoa Powder Dutch-processed is recommended
  • 0.5 teaspoon Baking Soda
  • 0.25 teaspoon Salt
  • 0.75 cup Unsalted Butter Softened
  • 0.66 cup Granulated Sugar
  • 0.25 cup Light Brown Sugar Packed
  • 1 teaspoon Vanilla Extract
  • 6 oz Bittersweet Chocolate Chopped into small pieces

Preparation Steps

  • In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chopped chocolate.
  • Divide the dough in half, shape into logs about 1.5 inches in diameter. Wrap tightly in plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
  • Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
  • Remove the dough logs from the refrigerator and slice into 1/2-inch thick rounds. Place cookies on prepared baking sheets, leaving some space between each cookie.
  • Bake for 12-15 minutes, or until the edges are set and the centers are still slightly soft. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
