  • 6 Large Eggs
  • 0.5 cup Cottage Cheese Low-fat
  • 0.25 cup Shredded Cheddar Cheese
  • 0.25 cup Chopped Cooked Ham
  • 2 tablespoons Chopped Green Onions
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a muffin tin.
  • In a large bowl, whisk together eggs, cottage cheese, cheddar cheese, ham, green onions, salt, and pepper.
  • Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 20-25 minutes, or until the egg bites are set and lightly golden brown.
  • Let cool slightly before removing from the muffin tin. Serve warm or cold.
