High-Protein Chicken Meal Prep Bowls

Ingredients
- 1 pound boneless, skinless chicken breasts cut into bite-size pieces
- 1 cup brown rice uncooked
- 2 cups water for the rice
- 2 cups broccoli florets small florets
- 1 medium red bell pepper sliced
- 2 tablespoons olive oil divided
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt divided
- 1/4 teaspoon black pepper
- 1/2 cup plain Greek yogurt
- 1 tablespoon lemon juice
Instructions
Cook the brown rice with the water according to package directions, then keep it covered for 5 minutes and fluff.
Heat the oven to 425°F. Toss broccoli and bell pepper with 1 tablespoon olive oil and half the salt on a sheet pan.
Season the chicken with paprika, garlic powder, remaining salt, and pepper. Add it to the sheet pan, toss with the remaining olive oil, and spread everything into one layer.
Roast for 18 to 22 minutes, stirring once, until the vegetables are tender and the chicken reaches 165°F in the thickest pieces.
Stir Greek yogurt and lemon juice together. Divide rice among four containers, add chicken and vegetables, and serve with the lemon yogurt sauce.
