These Healthy 3-Ingredient Banana Oatmeal Cookies are incredibly easy to make, perfect for using up those ripe bananas on your counter! They're a delicious and healthy snack, free of added sugar, eggs, or flour. Tastes like banana nut bread in a convenient cookie form!
Preheat oven to 350°F (175°C). Spray a non-stick cookie sheet with cooking spray or use a silicone baking mat (Silpat).
In a medium bowl, combine the mashed bananas and oats. Gently fold in the crushed walnuts.
Place a tablespoon of the mixture for each cookie onto the prepared cookie sheet. You should get about 16 cookies.
Bake for 15 minutes, or until the edges are golden brown and the cookies are set.
Notes
These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for a couple of days or frozen for longer storage. Feel free to add a pinch of cinnamon or a few chocolate chips for extra flavor!
