Healthy Caramel Popcorn with a Crisp Maple Coating

Ingredients
- 8 cups popped popcorn plain and unsalted
- 1/2 cup packed light brown sugar
- 1/4 cup coconut oil melted
- 1/4 cup maple syrup pure maple syrup
- 1/2 teaspoon fine salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
Instructions
Heat the oven to 250°F and line a large rimmed baking sheet with parchment. Put the popped popcorn in a very large bowl.
Combine the brown sugar, coconut oil, maple syrup, and salt in a saucepan over medium heat. Stir until the sugar dissolves and the mixture reaches a gentle bubbling simmer.
Simmer the caramel mixture for 3 minutes without letting it darken too quickly. Remove the pan from the heat and carefully stir in the vanilla and baking soda.
Pour the hot caramel over the popcorn and fold gently with a spatula until the pieces are evenly coated.
Spread the coated popcorn on the prepared baking sheet and bake for 15 minutes, stirring once halfway through.
Cool completely on the sheet. Break apart any clusters, then store the popcorn in an airtight container.
