Preparation Steps
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the thawed puff pastry sheet onto a lightly floured surface. If it's too cold, let it sit at room temperature for a few minutes until pliable.
Spread the Dijon mustard evenly over the puff pastry, leaving a small border around the edges.

Sprinkle the shredded cheddar cheese and chopped ham over the mustard layer.

Starting from one of the longer sides, tightly roll up the puff pastry into a log. Pinch the seam to seal.

Cut the log into 12 equal pinwheels (about 0.75 inches thick).
Place the pinwheels cut-side down on the prepared baking sheet. Brush the tops with the beaten egg wash.

Bake for 15-18 minutes, or until the pastry is golden brown and puffed.
Let cool slightly before serving.
Notes
These can be made ahead of time and baked just before serving. They are delicious warm or at room temperature.
